Tables made by assembling wooden planks, walls of red brick covered with a thin coat of whitewash, bucolic Windsor chairs and a gastronomic proposal that completely rethinks the old traditional Danish recipes. All this is Höst, the country restaurant in the centre of Copenhagen. The restaurant has been designed by Norm Architects, but behind its captivating simplicity there does not seem to be the schematic genius of an interior designer. And this is a point in its favour because, at a time when everything seems to be branded-approved-signed at all costs, a lone voice is what often stands out more than anything else.
Höst is that place where you feel “immediately at home”, perfect in its sought imperfection. The dishes served following the trend of the New Nordic Cuisine (the same as the famous Noma, so to speak), betting on local produce which is truly out of the ordinary and imparts very unusual and unexpected flavour combinations. The chef, Jonas Christensen, has developed a proposal which includes three menus of three courses each, or ‘à la carte’ dishes to match the moment. The kitchen is art.

The Moodboarders is a glance into the design world, which, in all of its facets, captures the extraordinary even within the routine. It is a measure of the times. It is an antenna sensitive enough to pick-up on budding trends, emerging talents and neglected aesthetics. Instead of essays, we use brief tales to tune into the rhythm of our world. We travelled for a year without stopping, and seeing as the memory of this journey has not faded, we have chosen to edit a printed copy. We eliminated anything episodic, ephemeral or fading, maintaining a variety of articles that flow, without losing the element of surprise, the events caught taking place, and the creations having just bloomed.
